Beet Chutney With Walnuts

Ingredientes

  • 4 med beet, roasted, peeled, and, diced
  • 1/2 c. red onion, finely, diced
  • 1 pch cayenne pepper
  • 1/4 tsp lemon, zest
  • 1 1/2 tsp lemon, juice
  • 1 Tbsp. walnuts, minced salt freshly cracked black pepper

Direcciones

  1. Preheat oven to 400 degrees FTo roast the beets, place them in a pan with a little water, cover with tinfoil and bake for 45 to 60 min till tender.
  2. Cold, then peel and dice beets. Place in a bowl.
  3. In a skillet, saute/fry onions in extra virgin olive oil for 1 to 2 min.
  4. Add in to beets along with the rest of the ingredients. Mix and adjust seasoning.
