The beets are known to have originated from the wild sea beets that were native to the coastlines of Indian and Britain. These were abundantly cultivated in the mediterranean region and middle east. Initially, only the greens were considered edible. It was so appreciated by the ancients, that it was offered in silver to Apollo at his temple in Delphi. In olden days, beets were consumed more for its medicinal properties rather than as a food. It was used to cure a number of ailments like common fever. It was the Romans who first began using it in recipes with honey and wine. Later slowly the started using it as a salad and, with broth etc..

Beets | Beetroot is one of the most healthiest among the veggies. It has so many nutritional benefits and helps in ailing many of the common illness. It is rich in Vitamin C which helps in fighting the common cold. It helps to prevent cardiovascular diseases and strokes because it is rich in Betanine and beet juice helps in reducing blood pressure. This is the main reason I picked beet as my ingredient for this weeks marathon. Todays post, not a big recipe but one of the best ways to have beets in diet. A simple stir fry with coconut.

Beetroot Poriyal | Beet stir fry

Grated beetroot seasoned with mustard seeds and urad dal and fresh coconut.

Prep Time: 10 Mins | Cook Time: 15 Mins | Total Time: 25 Mins | Serves: 2-3

Heat oil in a kadai or a pan. Once hot, add the mustard seeds and let it splutter. Then add the green chillies and curry leaves and give a quick stir.

Add the urad dal and once it starts to brown, add asafoetida and the grated beetroot.

Sprinkle some water, add salt and let it cook for about 10 minutes.

Once the beet is cooked, add the grtated coconut and turn off the flame. Check for salt and adjust.

Serve it as a side with rice.
