Ingredientes

  • 3 c. cake flour plus more
  • 2 Tbsp. baking pwdr
  • 2 Tbsp. sugar
  • 3/4 tsp salt
  • 1/2 c. butter cut into cubes
  • 2 c. whipping cream
  • 1 c. currants
  • 1 x egg yolk beaten Devonshire cream and preserves (optional)

Direcciones

  1. Sift together flour, baking pwdr, sugar and salt. Use paddle on electric mixer to work butter into flour mix till mealy. Add in whipping cream and currants. Mix on low till dough is smooth, 1 minute.
  2. Turn dough onto floured board and roll out to about 3/4-inch thick. Cut into 2 1/4-inch rounds with pastry cutter or possibly biscuit cutter. Place dough rounds 2 inches apart on baking sheet lined with parchment paper.
  3. Brush with beaten egg yolk and bake at 375 degrees till golden, 18 to 20 min. Serve with Devonshire cream and preserves, if you like.
  4. This recipe yields 12 to 14 scones.
