Receta Berries on a Cloud for 2
Every year on Valentine's Day, my sweetie and I have a nice "romantic" dinner at home~
Just me, my hubby....and our 3 pugs:)
This year our Valentine's Day Dinner Menu will be~
Tossed Garden Salad~
- Sirloin Steak For 2~ Topped with Herb Butter &
- French Fried Onion Rings~
- Twice Baked Potatoes~
- And for Dessert~
- This Dessert is easy, delicious and impressive~ And it's only 250 calories per serving~
- Berries on a Cloud for 2~
- 2 egg whites
- 1/8 t cream of tartar
- dash of salt
- 1/4 cup sugar
- 1/4 t vanilla extract
- 1 cup frozen, unsweetened mixed berries, thawed
- 1 t sugar
- 1 (3 oz) package sugar-free instant vanilla or lemon pudding and pie filling
- milk
- frozen whipped topping, thawed (I use Cool Whip Free)
- mint leaves, red m & m candies, red hot candies, for garnish
- Place egg white in a small bowl; let stand at room temperature for 30 minutes
Meanwhile, make pudding according to package directions, place in refrigerator until needed
Add cream of tartar and salt to egg whites; beat on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff peaks form, Beat in vanilla extract.
Drop meringue into two mounds on parchment paper-lined baking sheet. Shape into 3-1/2 inch cups with the back of a spoon.
Bake at 225 for 1 to 1-1/4 hours or until set and dry. Turn oven off; leave meringues in oven for 1 hour. Remove to wire racks to cool
In a small bowl, combine thawed berries and sugar, Let stand 5 minutes.
To assemble: Spoon pudding into cooled meringue shells, top with berries. Top berries with thawed whipped topping and garnish with mint leaves and candy.
Health Note: Pork is a great source of thiamin, also called vitamin B1. Thiamin is an important nutrient because it helps our bodies release the energy in our foods~
