Receta Berry Pie (Fresh)

- Wash and drain berries.
- Crush 1 c. of berries, combine with water and cook 2 min.
- Drain juice and reserve. Throw away pulp.
- Add in water if necessary to make 1 1/4 c. juice.
- In a saucepan combine sugar and cornstarch.
- Stir in berry juice, and cook over medium heat till thickened and clear.
- Stir in a few drips of food coloring if you like.
- Spoon about 1/4 c. of berry glaze proportionately over bottom and sides of the baked pastry shell.
- Arrange half the berries on the glaze on the bottom of the pastry.
- Spoon half the glaze over the berries.
- Spread remaining berries on top of glaze and spoon remaining glaze over the berries.
- Refrigerate4 hrs. Just before serving garnish with sweetened whipped cream and few choice whole berries.
