Ingredientes

  • 1 pound grnd beef
  • 1 lg. minced onion
  • 1 1/2 tbsp. all-purpose flour
  • 1 tbsp. chili pwdr
  • 1 teaspoon garlic pwdr
  • 3/4 teaspoon salt
  • 1/4 teaspoon grnd cumin
  • 1/4 teaspoon rubbed sage
  • 1 (16 ounce.) can undrained stewed tomatoes
  • 12 corn tortillas
  • 1/4 c. vegetable oil
  • 1 minced med. onion
  • 1/2 c. sliced olives
  • 2 c. shredded Monterey Jack cheese

Direcciones

  1. Cook grnd beef and large onion in a large skillet till meat is browned, stirring to crumble meat; drain. Add in flour, seasonings and stir 1 minute. Stir in tomatoes; cook till heated. At 3 to 5 seconds fry tortillas, one at a time, and add in oil; drain tortillas on paper towels.
  2. Combine medium onions and olives; sprinkle over tortillas. Spoon 2 Tbsp. meat filling on each tortilla; roll tightly and place a 13x9x2 inch baking dish. Pour enchilada sauce over tortillas; bake at 350 degrees for 15 min. Sprinkle with cheese; bake 5 more min and your ready to serve.
