Receta Best Ever Guacamole {and a contest!}
This post brought to you by Avocados from Mexico. All opinions are 100% mine.
Anybody out there love avocados? We sure do! I like chopping them up and tossing them in salsa. They are fabulous on turkey sandwiches. And they are a must have garnish in my Chicken Tortilla Soup. But our hands down favorite way to eat avocados is in guacamole. It has to be really good guacamole though! A few years ago a friend gave me a recipe for what she calls Rotel Dip. But in actuality it is just a recipe for the best guacamole I've ever tasted! I posted it a few years ago, but in case you missed it, here it is:
- Best Ever Guacamole
- 3 avocados, finely diced or mashed
- 2-3 Roma tomatoes, diced
- 1 10 oz can Rotel (diced tomatoes and green chilies), well drained
- 3-4 green onions, chopped
- 1/4- 1/2 bunch cilantro, chopped
- 1 Tbsp mayonnaise
- Garlic salt to taste
Combine all ingredients in a bowl and stir till well blended. Serve immediately with tortilla chips.
