%3C/p%3E%3Cp%3EYeah,%20it's%20my%20birthday%20and%20I%20should%20celebrate.%20%20But%20it's%20time%20to%20be%20sensible--I'm%20gettin%20within%20smackin%20distance%20of%2040.%20%20Hint:%20when%20I%20do%20smack%20right%20into%20it,%20today's%20high%20school%20freshman%20will%20be%20a%20senior.%3C/p%3E%3Cp%3EDo%20the%20math,%20but%20do%20it%20quietly.%20%20And%20for%20pity's%20sake,%20do%20not%20show%20your%20work.%3C/p%3E%3Cp%3EWe%20went%20fishing%20out%20of%20Empire,%20LA%20recently,%20almost%20to%20the%20Gulf.%20%20So%20I%20had%20some%20great%20fresh%20fish%20to%20use%20for%20this%20recipe.%20%20Here's%20an%20example%20of%20what%20we%20caught:%3C/p%3E%3Cp%3EThat's%20me%20sans%20head%20because%20by%20this%20point,%20I'd%20been%20up%20since%204%20AM%20and%20in%20the%20sun%20and%20wind%20for%20hours.%20%20And%20closer%20to%2040%20than%20I'd%20like%20to%20be.%20%20No%20one%20needs%20to%20see%20that.%20%20This%20redfish%20is%20the%20biggest%20fish%20I've%20ever%20caught--20%20pounds%20give%20or%20take%20an%20ounce.%20%20I%20could%20shove%20my%20whole%20arm%20down%20its%20throat.%20%20Or%20maybe%20The%20Boy's%20head.%20%20Ok,%20maybe%20not.%3C/p%3E%3Cp%3EOn%20with%20the%20show...%3C/p%3E%3Cp%3EMise%20en%20place%20for%20Tomato%20Butter%20Sauce:%20about%205%20ripe%20roma%20tomatoes,%20shrimp%20stock,%20minced%20garlic,%20salt,%20pepper,%20cayenne,%20butter%3C/p%3E%3Cp%3EEmeril%20says%20to%20seed%20and%20skin%20the%20tomatoes.%20%20I%20think%20wasting%20all%20that%20juicy%20tomato%20goo%20is%20a%20crime.%20%20And%20a%20waste%20of%20my%20time.%3C/p%3E%3Cp%3EChop%20about%205%20romas%20(you'll%20need%201%201/2%20cups).%20%20Mash%20while%20heating.%3C/p%3E%3Cp%3ENext%20add%20the%20shrimp%20stock,%20garlic,%20and%20seasonings.%20%20Let's%20chat%20a%20moment%20about%20the%20shrimp%20stock.%3C/p%3E%3Cp%3EThe%20recipe%20only%20takes%201/4%20c,%20so%20you%20might%20be%20tempted%20to%20use%20something%20else.%20%20I%20was.%20%20And%20did.%3C/p%3E%3Cp%3EAnd%20it%20wasn't%20nearly%20as%20good.%20%20Don't%20skip%20it!%3C/p%3E%3Cp%3ELet%20me%20interrupt%20for%20a%20minute%20or%20two%20with%20some%20timing%20tips.%3C/p%3E%3Cp%3ELike%20any%20butter%20sauce,%20once%20the%20butter%20goes%20in:%3C/p%3E%3Cp%3Eya%20need%20to%20get%20ya%20eatin%20on,%20baby.%3C/p%3E%3Cp%3ENo%20one%20wants%20an%20oily,%20separated%20sauce.%3C/p%3E%3Cp%3EThat%20puts%20the%20pressure%20on,%20doesn't%20it?%3C/p%3E%3Cp%3EAnd%20I%20don't%20deal%20well%20with%20that.%3C/p%3E%3Cp%3ESo%20for%20timing%20the%20meal:%3C/p%3E%3Cp%3EI%20like%20to%20prepare%20the%20sauce%20until%20this%20point%20then%20go%20to%20work%20on%20the%20fish.%3C/p%3E%3Cp%3EBut%20keep%20the%20sauce%20warm%20or%20reheat%20just%20before%20adding%20the%20butter.%3C/p%3E%3Cp%3EFor%20the%20fish:%20fish%20(um,%20duh),%20Tony's.%20%20That%20is%20all.%3C/p%3E%3Cp%3ESprinkle%20both%20sides%20of%20your%20fish%20(any%20firm%20white%20fish)%20w/%20Tony's.%3C/p%3E%3Cp%3EBake%20or%20broil%20until%20the%20fish%20flakes.%3C/p%3E%3Cp%3EBack%20to%20the%20sauce.%20%20Cut%20the%20butter%20in%20cubes.%20%20When%20you're%20about%20to%20take%20the%20fish%20out%20of%20the%20oven,%20stir%20the%20butter%20into%20the%20sauce%20a%20few%20cubes%20at%20a%20time.%3C/p%3E%3Cp%3ELike%20I%20mentioned%20earlier,%20I%20reduced%20the%20amount%20to%203%20TBSP%20(from%20an%20entire%20stick).%3C/p%3E%3Cp%3EUp%20to%20you.%3C/p%3E%3Cp%3EAfter%20the%20butter%20melts%20in,%20the%20sauce%20will%20be%20rich%20and%20velvety.%3C/p%3E%3Cp%3EWe%20enjoyed%20this%20with%20sauteed%20zucchini.%3C/p%3E%3Cp%3EWe%20had%20Blueberry%20Focaccia%20instead%20(coming%20up%20soon).%3C/p%3E%3Cp%3EThis%20is%20linked%20to:%3C/p%3E%3Cp%3EWhat's%20On%20the%20Menu%20Wednesday%20@%20Dining%20With%20Debbie%3C/p%3E%3Cp%3ELink%20your%20menu%20for%20today%3C/p%3E%3Cp%3EThursday%20Tip%20Day%20@%20Around%20My%20Family%20Table%3C/p%3E%3Cp%3ELink%20up%20a%20tip%20%22related%20to%20cooking,%20food,%20kitchen%20prep,%20and%20even%20ways%20to%20keep%20the%20kids%20entertained%20while%20cooking%22%3C/p%3E%3Cp%3ETomato%20Butter%20Sauce%3C/p%3E%3Cp%3Eadapted%20from%20Emeril%3C/p%3E%3Cp%3EMash%20the%20tomatoes%20a%20small%20nonreactive%20saucepan%20over%20high%20heat%20for%20about%201%20minute.%20Add%20the%20garlic,%20shrimp%20stock,%20salt,%20cayenne,%20and%20black%20pepper%20and%20bring%20to%20a%20boil,%20stirring%20or%20whisking.%20Continue%20cooking,%20stirring%20or%20whisking%20constantly,%20for%20about%201%20minute.%3C/p%3E%3Cp%3EAdd%20the%20butter%20a%20few%20cubes%20at%20a%20time,%20stirring%20or%20whisking%20to%20incorporate.%3C/p%3E%3Cp%3EServe%20immediately%20or%20prepare%20up%20until%20adding%20the%20butter%20and%20store,%20refrigerated,%20in%20an%20airtight%20container.%20Reheat%20in%20a%20saucepan%20over%20low%20heat.%20When%20the%20sauce%20comes%20to%20a%20simmer,%20add%20the%20butter.%20Enough%20for%20about%204-5%20medium%20fish%20fillets%20(with%20the%20reduced%20amount%20of%20butter).%3C/p%3E%3Cp%3ENotes:%3C/p%3E%3Cp%3E*%20I%20don%E2%80%99t%20peel%20or%20seed An excellnt recipe. I didn't have any shrimp broth, so I substituted and just loved it.
