,%20I%20figured%20what%20could%20be%20better%20than%20cookies%20made%20of%20cookies??%3C/p%3E%3Cp%3EBiscotti,%20with%20its%20long%20lasting%20shelf%20life%20and%20desirable%20crunchy%20bite,%20have%20long%20been%20a%20favorite%20of%20mine,%20and%20substituting%20Biscoff%20Spread%20for%20Nutella%20in%20our%20favorite%20biscotti%20version%20seemed%20a%20natural%20choice.%20%20I%20found%20the%20dough%20to%20be%20irresistible,%20and%20the%20cookies%20baked%20up%20beautifully.%3C/p%3E%3Cp%3ENot%20being%20able%20to%20wait%20until%20they%20cooled,%20my%20first%20bite%20of%20warm%20cookie%20brought%20a%20nice%20biscotti%20texture,%20but%20also%20a%20fairly%20bland%20cookie.%20%20At%20first%20I%20was%20slightly%20disappointed%20and%20waited%20for%20the%20sliced%20and%20twice%20baked%20cookies%20to%20cool.%20%20Upon%20second%20tasting,%20the%20texture%20brought%20the%20familiar%20fabulous%20biscotti%20crunch%20and%20crumb%20with%20only%20a%20hint%20of%20the%20original%20Biscoff%20flavor.%20%20I%20did,%20however,%20find%20myself%20reaching%20for%20a%20second%20before%20turning%20away.%3C/p%3E%3Cp%3EPutting%20the%20cookies%20away%20for%20the%20night%20I%20brought%20them%20as%20a%20taste%20test%20for%20my%20carpool%20girls%20the%20next%20day,%20and%20received%20comments%20of,%20%22MMm!%20%20Just%20like%20a%20shortbread!%22,%20%22Can%20I%20have%20more?%22%20and%20%22I%20give%20them%20an%208%20out%20of%2010!%22.%20%20Asking%20what%20they%20thought%20of%20the%20flavor,%20all%20three%20girls%20said%20that%20the%20flavor%20was%20light,%20like%20shortbread,%20but%20that%20I%20was%20welcome%20to%20make%20them%20anytime.%20%20Little%20Maggie%20from%20across%20the%20street,%20a%20certified%20Biscoff-aholic,%20claimed%20them%20to%20be%20%22dreamy%22%20and%20says%20she's%20going%20to%20be%20making%20her%20own.%3C/p%3E%3Cp%3EI%20found%20these%20little%20guys%20grew%20on%20me%20as%20they%20%22aged%22%20a%20day%20or%20two%20and%20developed%20a%20taste%20reminiscent%20of%20those%20little%20Delta%20beauties,%20but%20that%20it%20was%20the%20texture%20that%20kept%20me%20returning.%20%20Days%20later%20as%20my%20cold/flu%20raged%20on,%20I%20found%20the%20biscotti%20to%20be%20the%20perfect%20complement%20to%20a%20soothing%20cup%20of%20hot%20Green%20Tea%20or%20my%20morning%20cup%20of%20coffee%20(which%20my%20husband%20kindly%20prepared%20for%20me!).%3C/p%3E%3Cp%3EPerfect%20a%20day%20or%20two%20after%20baking%20and%20with%20a%20long%20shelf%20life,%20these%20Biscoff%20Biscotti%20are%20somewhat%20bland,%20but%20bring%20a%20nice%20bite%20when%20in%20need%20of%20a%20little%20pick%20me%20up.%20%20Ideal%20for%20those%20days%20when%20Mom%20is%20a%20little%20under%20the%20weather.%3C/p%3E%3Cp%3EBiscoff%20Biscotti%3C/p%3E%3Cp%3EThe%20perfect%20biscotti%20texture%20reminiscent%20of%20those%20beloved%20Biscoff%20cookies%20found%20on%20Delta%20airline%20flights,%20these%20cookies%20had%20us%20all%20reaching%20for%20more.%3C/p%3E%3Cp%3EAdapted%20from%20our%20Amazing%20Race%20Nutella%20Biscotti%3C/p%3E%3Cp%3Einto%20slices,%20then%20just%20spreading%20out%20the%20slices,%20but%20not%20laying%20them%20on%3C/p%3E%3Cp%3Etheir%20side.%3C/p%3E%3Cp%3EReduce%20the%20oven%20temperature%20to%20300%C2%BA%20and%3C/p%3E%3Cp%3Ebake%20the%20biscotti%20for%3C/p%3E%3Cp%3Eanother%2015%20to%2020%20minutes.%20Remove%20from%20the%20oven%20and%20remove%20the%20biscotti%3C/p%3E%3Cp%3Eonto%20a%20wire%20rack%20for%20cooling.%20%20Note%20that%20the%20cookies%20will%20crisp%20as%20they%3C/p%3E%3Cp%3Ecool.%3C/p%3E%3Cp%3EStore%3C/p%3E%3Cp%3Ein%20an%20airtight%20container%20for%20up%20to%20a%20week...%20though%20I%20can%20can%20vouch%20that%20our%20were%20tasty%20even%20longer%20than%20that.%3C/p%3E){kind=link}
