Biscoff Rice Krispie Treats

Summer is here, and it is hot outside. That calls for no bake desserts. Anything that is quick, easy, and doesn’t heat up the kitchen makes me happy right now. It is crazy to me how busy summer time is, so I am excited if I can make a special treat, and be out of the kitchen and onto the next thing in a few minutes.

If you are a regular around here, you know that I am a fan of Biscoff spread or Cookie Butter (if you are a Trader Joe’s person). It works great in place of peanut butter, if you have any peanut allergies in your house. Target now carries Biscoff spread, so it should be relatively easy for you to find too.

I have actually made these bars a couple times now, and they always disappear quickly. I personally would be happy with just a spoon and a bowl full of the chocolate layer on top! The rice krispie treat part is dense from the Biscoff spread, but still gooey from the marshmallows. I am not a huge Rice Krispie treat fan, but I could eat these all day, every day and be a happy girl. These are a definite keeper in my house!

Biscoff Rice Krispie Treats

Serves: 16

Line an 8×8 in baking dish with foil, and spray with non-stick spray.

In a large microwave safe bowl melt butter and marshmallows together (heat for 45 seconds at a time, stirring in between). Once mostly melted, add Biscoff spread. Heat for 30 seconds, and stir until smooth.

Add Rice Krispies, and stir to evenly coat. Press firmly into the prepared pan.

To prepare the topping microwave chocolate chips and biscoff spread for 1 minute, stir and repeat in 30 second intervals until smooth.

Pour over Rice Krispies.

Let the chocolate completely set up, before cutting into squares.

Store in an air tight container for up to 5 days
