Ingredientes

  • 2 tbsp. butter
  • 1 pound stewing beef, cut into 1/2 inch cubes
  • 1 med. onion, minced
  • 4 c. beef stock
  • 1/2 c. minced dry apricots
  • 1/2 c. minced dry prunes
  • 1 clove garlic, halved
  • 1 teaspoon grnd ginger
  • 1/4 c. cornstarch, dissolved in 1/2 c. cool water
  • Oat Flour Biscuits (see recipe)

Direcciones

  1. Heat butter in a Dutch oven. Add in beef cubes and brown on all sides. Add in onions and saute/fry till translucent/soft. Stir in stock, apricots, prunes, garlic, and ginger. Simmer for about 2 hrs or possibly till meat is tender. Throw away garlic. Remove meat with a slotted spoon. Add in cornstarch mix to pot and stir constantly over medium heat till gravy thickens. Return meat to gravy and keep stew hot while biscuits are prepared.
