1 lb ground bison 1 small onion, chopped 1 large clove garlic, minced 8 ounces crushed tomatoes (I used Cento for the lowest sugar and sodium content) 1 teaspoons chili powder 1 teaspoon mustard powder 2 Tablespoons Heinz 57 1½ teaspoons balsamic vinegar ¾ teaspoon pepper
In a skillet over medium heat, cook bison until brown. Add onions and garlic. Cook for 2-3 minutes or until vegetables begin to become tender. Stir in the Heinz 57, crushed tomatoes, and seasonings. Mix thoroughly and simmer for 8-12 minutes. Taste and adjust seasonings if desired. 3.5.3208
This dish was one of the last things I cooked while on my weight loss challenge. Serving it with Ezekiel “English” muffins made them out of this world. (ok, I know the photo doesn’t have an Ezekiel muffin, but I didn’t want to waste one for a photo shoot. They were my prized possession.)
I was grasping onto my last chance for culinary creativity given the “list of ingredients” that fit into this stinking weight loss challenge. How in the world I managed to come up with this low salt, low sugar version of Sloppy Joe’s is beyond me. Technically, a Sloppy Joe is known for its sweet tangy flavor. I compromised here by using a dash of 57 sauce to achieve the tang I was so longing to taste.
Replacing ground beef with Bison for this recipe is also perfect because well, Bison! No really, Bison is not a grainy and ground beef. It’s leaner and has much more flavor that 93/7 ground beef.
Next time you are in the meat department grab the Bison and give it a try. I promise that once you go Bison you will rather fight than switch.
Thanks for stopping by and have a great day.
