Receta Bissara (Fava Bean Dip)

- Blanch and remove skins of fava beans.
- Boil the peeled fava beans till tender
- Drain the beans and reserve 1/4 c. liquid.
- In a food processor, combine half the beans, the reserved liquid, garlic and the lemon juice.
- Pulse till the mix is smooth, scraping down the sides, if needed.
- Add in the extra virgin olive oil, and remaining beans and pulse till smooth.
- Add in spices, salt and pepper and pulse.
- Transfer to a serving bowl, add in the parsley and stir.
- Serve with hot pita wedges.
- Yield: 2 c.
