Ingredientes

  • 1 1/2 c. whole wheat pastry flour
  • 1/2 tsp salt
  • 1/3 c. oil
  • 4 Tbsp. ice water (about)
  • 6 slc bacon (nitrite-free)
  • 1 ounce grated swiss cheese (about)
  • 1 x egg
  • 1/3 c. light cream
  • 1 tsp minced chives
  • 1 dsh white pepper
  • 1/8 tsp nutmeg
  • 1/4 tsp salt

Direcciones

  1. Preheat oven to 400 F.
  2. Mix together flour and salt.
  3. Mix together oil and water.
  4. Add in liquids to dry ingredients, and stir with fork till dough forms a ball. Divide into twelve small balls and press each ball of dough into one space of a miniature muffin tin, forming a little pastry shell. Build up a nice edge.
  5. Fry bacon till crisp; drain and crumble. Place bits of crumbled bacon and grated cheese in each of the twelve miniature quiche shells.
  6. Lightly beat together remaining ingredients and carefully spoon into shells. Sprinkle with nutmeg.
  7. Bake in preheated oven for about 15 min.
  8. Yield: 1 dozen bite-size quiches.
