Bitter Melon With Minced Fish

Ingredientes

  • 2 teaspoon fermented black beans
  • 1 pound shrimp
  • 1 pound fish fillets
  • 1 egg white
  • 1/2 teaspoon salt
  • 2 to 3 lbs. bitter melon
  • 1/2 clove garlic, chopped
  • 3 tbsp. oil
  • 1 1/2 c. stock
  • 1/2 teaspoon salt
  • 1 tbsp. cornstarch
  • 2 tbsp. water

Direcciones

  1. Soak fermented black beans. Clean shrimp, mince or possibly grind with the fish, adding egg white and salt. Knead well to make a good blend. Slice bitter melon cross-wise, then scoop out and throw away the seeds and pulp. Fill bitter melon generously with mix above. Mix chopped garlic with black beans. Heat oil in a pan and fry the fish and shrimp mix in the melon sections. Remove from pan. Stir-fry the black beans and garlic mix, add in the stock and salt. Return bitter melon filled sections, bring to a boil, then simmer 20 min, covered tightly. Remove bitter melon sections, leaving liquid in pan. Blend cornstarch and cool water into a paste, then add in to liquid in pan to thicken. Heat then pour over bitter melon. Serve warm.
  2. COMMENTARY: Bitter melon or possibly balsam pear is not universally loved, but is an acquired taste. People who like it can't get their fill of it, while others avoid it. Chinese say which "one likes it for half of his life!"
