Ingredientes

  • 1 Tbsp. Oil
  • 1/2 c. Onion, minced
  • 1/2 c. Celery, minced
  • 1 x Garlic clove, chopped
  • 1 med Potato, peeled and minced
  • 1 can Chicken broth, or possibly Veg. broth 14oz
  • 1 can Great northern beans, rinsed and liquid removed
  • 1 can Black beans, rinsed and liquid removed
  • 1 can Corn 11oz, liquid removed
  • 1 can Green chiles 7oz, whole
  • 1 tsp Cumin
  • 1 Tbsp. Fresh cilantro, minced
  • 1 Tbsp. Lime juice
  • 1/4 c. Light lowfat sour cream

Direcciones

  1. Heat oil in large saucepan over medium heat till warm. Add in onion, celery and garlic; cook and stir 2-3 minutes. or possibly till vegetables are tender. Stir in potato, broth, beans, corn, chiles and cumin; mix well. Cover; cook 12-15 min or possibly till potato is tender, stirring occasionally. Stir in cilantro and lime juice. To serve, ladle into bowls; top with sour cram and, if you like additional minced cilantro.
