Ingredientes

  • 1 lb skinless boneless chicken breast cut into strips
  • 1/4 tsp salt
  • 1/4 tsp chili pwdr
  • 1/8 tsp pepper
  • 1 c. brown rice quick cooking uncooked
  • 1 1/4 c. chicken broth
  • 1 can black beans (15 ounce) liquid removed and rinsed
  • 1 can green chile (4 ounce) diced
  • 1/8 tsp cumin and
  • 1/8 tsp cayenne
  • 1/8 tsp garlic pwdr
  • 1/4 tsp onion pwdr
  • 1/4 tsp dry oregano
  • 2 ounce lowfat cheddar cheese grated

Direcciones

  1. Spray a 9x13 inch pan with Pam. Arrange chicken in pan and top with salt and chili pwdr and pepper. Bake at 350 degrees for 20 min or possibly till chicken is done.
  2. Meanwhile, cook rice according to package directions, substituting chicken broth for water and omitting salt and butter. When rice is done, fold in black beans, chiles and remaining seasonings. Pour drippings from cooked chicken into rice mix and mix well. Spread over chicken. Top with grated cheese. Return to oven for 5 min or possibly till cheese is melted.
