Black Bean & Avocado Soup

Ingredientes

  • 2-cans-15.5 ounces each: Drained Black Beans
  • 1-1/2 cup vegetable stock (low sodium)
  • 1/4 cup light cream
  • one ripe avocado, chunked, garnish
  • one scallion, cut on the bias, garnish
  • one tablespoon cumin
  • one teaspoon garlic powder
  • Chopped cilantro
  • one teaspoon black pepper

Direcciones

  1. In a food processor add black beans, cilantro, cream and process on high one-two minutes, transfer to a soup pot with a lid
  2. Add vegetables stock and stir well to combine, add seasonings, stir again, cook on medium heat 15 minutes, stir during cooking time.
  3. Ladle into soup bowls, garnish with scallions and avocado.
  4. Delicious!
