Ingredientes

  • 1 stk butter
  • 2 lrg Minced onions
  • 1 lrg Minced bell pepper
  • 2 x Cloves garlic, chopped
  • 1 can Rotel tomatoes, diced
  • 2 tsp Cumin
  • 2 can 16 ounce. black beans, not liquid removed
  • 12 x 6 inch corn tortillas, cut into quarters
  • 2 c. Monterey Jack cheese (8 ounce.)
  • 2 x Tomatoes, diced
  • 2 c. Shredded lettuce
  • 1 bn Green onions, minced
  • 1 sm Can black olives, minced Lowfat sour cream

Direcciones

  1. Saute/fry onions, bell pepper, and garlic in butter. Add in tomatoes, cumin, and beans. Simmer for 10 min. In a 9x13 oiled casserole dish layer first beans, then tortillas, cheese. Repeat. Bake at 350 degrees F. for 20-35 min. Remove from oven and let set 5 - 10 min to set. Cut and serve. Garnish with tomatoes, lettuce, green onions, black olives, and lowfat sour cream as desired.
