Black Bean Chili Salad

Ingredientes

  • 1 (12 ounce.) pkg. black beans
  • 2 c. minced onion
  • 12 cloves minced garlic
  • 2 (20 ounce.) cans whole tomatoes, minced, undrained
  • 1 pound grnd beef
  • 1 green pepper, minced
  • 2 tbsp. chili pwdr
  • 1 1/2 tbsp. grnd cumin
  • 1/8 teaspoon crushed red pepper
  • 1 c. grated Cheddar cheese

Direcciones

  1. In large cast-iron pot, put in black beans and cover with water. Bring to a boil. Turn off heat and let set at least 4 hrs. Turn on heat, add in 1 1/2 c. onion and 8 cloves garlic. Simmer till beans are tender. Drain liquid from beans. Add in tomatoes to beans and cook on low heat.
  2. While beans are cooking, brown grnd beef in skillet with remaining onions, green pepper, garlic, chili pwdr, cumin and red pepper. Drain off all fat and add in to beans and tomatoes. Heat thoroughly and serve topped with grated cheese. Serves 8.
