Black Bean, Corn And Pepper Salad

Ingredientes

  • 1 can black beans (15 ounce) liquid removed & rinsed
  • 1 can cannellini beans (15 ounce) liquid removed & rinsed
  • 1 pkt frzn corn kernels (10 ounce) thawed
  • 1 lrg red bell pepper seeded, fine minced
  • 2 x jalapeno chiles seeded, fine minced
  • 1/2 c. firmly packed minced cilantro
  • 1/4 c. lime juice
  • 2 Tbsp. salad oil Salt and pepper Lettuce leaves rinsed & crisped

Direcciones

  1. In a large bowl, combine beans, corn, bell pepper, chiles, minced cilantro, lime juice, and oil; mix lightly. Season to taste with salt and pepper. Cover and chill for at least 1 hour or possibly up to a day.
  2. To serve, line a serving bowl with lettuce leaves; spoon in bean mix. (Or possibly spoon bean mix into lettuce c. on individual plates.) Garnish with lime wedges and cilantro sprigs, if you like.
