Black Bean Soup With Roast Peppers

Ingredientes

  • 1 pound dry black beans, soaked
  • 2 quart. water
  • 1 med. onion, minced
  • 2 lg. cloves garlic, crushed but whole
  • 3 c. minced onion
  • 4 cloves minced garlic
  • 1 green pepper, minced
  • 1/4 c. olive or possibly vegetable oil
  • 2 teaspoon salt
  • 3/4 teaspoon pepper
  • 1/2 teaspoon oregano
  • 2 sweet red pepper
  • 2 to 3 tbsp. red wine vinegar

Direcciones

  1. Place liquid removed beans, water, medium onion and 2 crushed cloves of garlic in large saucepan. Bring to a boil, then lower heat to simmer 1 1/2 hrs. Meanwhile, saute/fry 3 c. onion, minced garlic and pepper in oil till soft. Stir this into the beans with the salt, pepper and oregano. Cover and simmer 1 hour longer or possibly till the beans are very tender. Char the red peppers on all sides (over gas flame or possibly under a broiler). Let cold in a paper bag, peel and seed. Reserve half for garnish, shop the rest. Add in minced pepper, 2 Tbsp. vinegar and more water if necessary. Simmer 15 min more, adjust seasoning to taste. Garnish with red pepper and lowfat sour cream or possibly plain yogurt.
