Ingredientes

  • 1 pound black beans
  • 3 c. water
  • 1/4 teaspoon grnd cumin
  • 1/4 teaspoon oregano
  • 2 bay leaves
  • 1 1/2 stalks celery, finely minced
  • 1 yellow onion
  • 2 garlic cloves
  • 1 med. tomato
  • 2 c. chicken stock
  • 1/2 pound raw shrimp
  • 1 tbsp. sherry
  • 1 tbsp. white vinegar

Direcciones

  1. Cook beans in water with cumin, bay leaves, oregano, and celery till beans are tender. Remove bay leaf. Saute/fry onion and garlic slivers in extra virgin olive oil. Add in tomato; cook 3 min. Add in chicken stock; simmer. Mix all in blender till smooth.
  2. Cut shrimp into 1/2-inch pcs. Add in to mix. Cook 2 min. Combine all ingredients; add in sherry and stir. Just prior to serving, add in vinegar; stir. Serve with thin sliced lemon rings.
