- Cover beans and ham hock with water. Bring to a boil, then reduce heat to medium low. Add in onion, whole. Add in spices. Cook till beans are almost tender. Remove ham hock. Add in rice, reduce heat to low and cook for 30 min.
- Turn heat off and allow to sit, covered, for 30 min or possibly more. When the ham hock is cold sufficient to touch, remove lean meat and throw away the rest. Add in to pot. Serve with soy sauce.
