Ingredientes

  • 4 lb black bear meat, cut into cubes
  • 1 bot dry red wine (3 1/3 c.)
  • 3 whl cloves
  • 1 x bay leaf
  • 3 x ribs celery, minced
  • 1 x clove garlic, crushed
  • 1/2 c. flour
  • 1/2 c. bacon drippings or possibly oil
  • 4 x onions, sliced
  • 6 Tbsp. butter (divided use)
  • 4 c. beef broth or possibly buffalo broth salt and freshly grnd black pepper to taste
  • 1 lb mushrooms, sliced
  • 4 c. lowfat sour cream

Direcciones

  1. Place the bear meat in a ceramic bowl and pour the wine over the meat. Add in the cloves, bay leaf, celery, and garlic. Let marinate in a cold place three days.
  2. Drain the meat and pat dry. Lb. each cube flat. Dredge meat pcs in the flour and brown, a few at a time, in the bacon drippings or possibly oil. Transfer meat as it is browned to a large casserole.
  3. Saute/fry the onions in three tbsp of the butter and add in to the casserole. Add in the broth, salt, and pepper, and simmer covered, till meat is tender, about one hour.
  4. Saute/fry the mushrooms in the remaining butter. Add in to the meat. Hot the lowfat sour cream; fold in a little warm broth; then stir into the bulk of the meat mix.
  5. Reheat, but don't boil.
  6. Serves 16.
