- Combine 2 c. water and dry cherries in large saucepan. Bring to boil. Reduce heat; simmer till water is reduced to 1/4 c., about 15 min. Scrape in seeds from vanilla bean; add in bean. Stir in dark cherries with juices and remaining ingredients. Simmer till cherries are tender and juices thicken, about 50 min. Cold. (Can be made 3 days ahead. Cover and chill. Serve at room temperature.)
- This recipe yields about 3 1/2 c..
- Comments: When in season, fresh cherries can be used in place of the frzn ones.
