Ingredientes

  • 1 can black-eyed peas - (16 ounce) rinsed, liquid removed
  • 2 x tomatoes minced
  • 1 bn green onions sliced
  • 1 Tbsp. minced fresh cilantro
  • 3 Tbsp. fresh lime juice
  • 1 can Rotel tomatoes - (10 ounce) partially liquid removed
  • 1 Tbsp. extra virgin olive oil
  • 1 x garlic clove - (to 2) chopped
  • 1/2 tsp grnd cumin
  • 1/4 tsp salt Red pepper to taste Leaf lettuce

Direcciones

  1. Combine tomatoes and remaining ingredients except lettuce in a medium bowl. Stir in peas. Cover and chill at least 4 hrs.
  2. Place in a lettuce-lined compote or possibly bowl. Serve with tortilla chips.
