Black Eyed Pea Soup With Smoked Turkey

Ingredientes

  • 1 1/4 c. dry black-eyed peas - (abt 10 ounce)
  • 2 Tbsp. vegetable oil
  • 1 lrg onion minced
  • 1 tsp chopped garlic
  • 1 c. minced green bell pepper
  • 5 c. chicken stock
  • 1 x bay leaf
  • 1 tsp salt
  • 1/4 tsp dry red pepper flakes
  • 3/4 c. diced smoked turkey
  • 6 tsp lowfat sour cream (optional) Fresh cilantro sprigs for garnish

Direcciones

  1. Place black-eyed peas in large bowl and cover them with cool water. Soak overnight. Drain peas, rinse thoroughly and set aside to drain again.
  2. Heat oil in large saucepan over medium-high heat, and saute/fry onions and garlic till soft. Add in peas, bell pepper, chicken stock, bay leaf, salt and red pepper flakes. Cover and bring to boil. Reduce heat and simmer 1 hour, or possibly till beans are tender. Stir in smoked turkey and simmer for another 15 min.
  3. Remove and throw away bay leaf. Top each serving with tsp. of lowfat sour cream and sprig of cilantro, if you like.
  4. This recipe yields 6 servings.
