- Boiled once, cut in small pcs
- Fry sausage and cut into bite-size pcs. Saute/fry onion, pepper, garlic and parsley. Cook till limp. Add in salt meat, sausage, blackeyed peas, and rice.
- Season to taste. Add in 12 c. water. Bring to a boil; mix well and cover tightly. Cook on lowest heat for 45 min. Don't remove cover during this time. Remove cover for 5 - 10 min before serving .
