Ingredientes

  • 1 c. Dry black eyed peas
  • 2 1/2 c. Water
  • 3 c. Minced turnips
  • 3 c. Minced mushrooms
  • 1 lrg Onion, minced
  • 1 Tbsp. Apple juice concentrate
  • 1/2 c. Dark beer or possibly stout
  • 1/2 c. Reserved bean stock
  • 4 Tbsp. Wholewheat flour combined with just sufficient water to make a thin paste
  • 2 Tbsp. Minced parsley
  • 2 Tbsp. Tomato puree (optional)
  • 2 tsp Soy sauce
  • 1/2 tsp Cinnamon
  • 1/4 tsp Grnd cloves Salt/pepper to taste (optional)

Direcciones

  1. Cook peas in water till tender, about an hour. Drain and reserve 1/2 c. of the stock.
  2. Preheat oven to 400 F/200 C. "Saute/fry" the veggies in the apple juice for a few min. Stir in the flour/water mix and cook and stir for a minute. Slowly add in the beer and cook and stir for a minute. Slowly add in the reserved bean stock and cook and stir for a minute. Add in the remaining ingredients and gently boil for about 5 more min. Pour into a casserole. Bake, covered, for 1 hour.
