Ingredientes

  • 3 1/2 c. Fresh black-eyed peas or possibly Frzn, thawed
  • 3 c. Chicken stock or possibly canned low-salt broth
  • 4 ounce Ham, finely minced
  • 1 sm Yellow onion, minced
  • 2 Tbsp. Balsamic vinegar or possibly red wine vinegar
  • 3 lrg clv garlic, chopped
  • 1 x Bay leaf
  • 1/2 tsp Dry thyme, crumbled
  • 1/4 tsp Dry crushed red pepper

Direcciones

  1. Bring all ingredients to boil in heavy large saucepan. Reduce heat and simmer till peas are tender, stirring occasionally, about 45 min.
  2. Season to taste with salt and pepper.
  3. Yield: 6 servings
