This South Asian Black Pepper Chicken Stir Fry is a sweet and savory delight, with flavors of ginger, soy, and garlic playing off one another.

How did we get to April so fast? Spring is a sort of renewal of sorts. The weather is cool in the mornings and we start getting that itch to spend more time outdoors. All the recipe surfing I did all Winter means it’s time to start creating them in my kitchen. But I have to tell you, it doesn’t happen to often that I see a dish on FB or Pinterest that I absolutely have to make the same day.

Well that is exactly what happened when I saw a Palatable Passtime’s Black Pepper Chicken dish on Facebook.

I was in luck because I actually had all the ingredients I needed to make this fantastic dish.

I modified it to suit my taste, because I am that dangling modifier you’ve head tell about.

16 ounces boneless, skinless chicken breasts, cut into cubes 1 red bell pepper, seeded and cut into strips 6 ounces brocollini heads only 1-inch fresh ginger root, peeled and finely chopped 2 cloves garlic, peeled and finely minced ½ Tablespoons freshly ground black pepper 3 Tablespoons Arrowroot 4 Tablespoons sweet soy sauce, divided 4 Tablespoons rice vinegar, divided 2 Tablespoons Oyster Sauce divided 2 Tablespoons Avocare Avocado Oil 2 scallions chopped for garnish

In a bowl, whisk together half of the soy sauce, half the Oyster sauce and half of the vinegar. In a separate bowl add the arrowroot. Coat the chicken in the arrowroot and then the sauce. Set aside. Add oil to a skillet and heat to medium. Add the garlic and ginger and cook for 30 seconds, just until garlic is golden and fragrant, but not burnt. Turn up the heat to medium-high. Add the coated chicken with any juices left in the bowl and cook for 3 minutes. Add the bell pepper strips and brocollini, Add remaining soy sauce and vinegar, and black pepper and stir Lower the heat to medium and cook for about 10 minutes until peppers have softened and chicken is cooked through. 3.2.2925
