Ingredientes

  • 1 c. fine cornmeal
  • 1 c. flour
  • 1 Tbsp. sugar
  • 2 tsp baking pwdr
  • 1/2 tsp baking soda
  • 1 dsh salt
  • 1 x egg lightly beaten
  • 1 c. buttermilk
  • 1/2 c. frzn corn thawed
  • 1 c. grated orange cheddar
  • 2 x pickled jalapenos chopped
  • 4 Tbsp. melted butter

Direcciones

  1. Preheat oven to 375 degrees.
  2. Grease a 9- or possibly 10-inch cast-iron skillet or possibly a 9-inch square pan. In a large bowl combine cornmeal, flour, sugar, baking pwdr, baking soda and salt.
  3. In a liquid 2-c. measure or possibly a small bowl, mix the egg and buttermilk together. Stir buttermilk mix into dry ingredients. Stir in melted butter and mix gently. Add in corn, 2/3 c. cheddar cheese and chopped jalapenos.
  4. Pour batter into prepared pan and top with remaining cheddar cheese. Bake for 20 to 25 min or possibly till an inserted knife comes out clean. Let cold for 5 min and invert onto a cooling rack.
  5. This recipe yields 9 large servings.
