- Prepared Blackberries by washing, removing stems, trash overripe and underripe berries.
- Crush sufficient to fill air spaces
- Measure sugar and keep ready. Mix pectin with fruit and using high heat to bring to a boil. At once add in sugar. Bring to a full boil (a boil which can't be stirred down). Boil hard for one minute. Remove from heat and skim for 5 min. This allows for floating fruit. Put quickly into jars leaving 1/2 inch head space. Clean rim and seal with rings.
- Tighten rings and set on newspaper to cold. It should set in 24 hrs.
- The next day remove rings and wash jars. Store with rings off. You can remove the seeds by putting fruit through a fine wire sieve before cooking. Remove some but not all of the seeds. Your choice.
- Makes about8 c. jam
