Blackberry Mint Iced Tea

I like mint tea, iced or hot. It brings a lilt to the day not much else can. The addition of blackberries just added to the fun, especially since I remember picking wild blackberries as a kid--waaay back when.

  • 1/3 to 1/2 c. sucralose or other sweetener or 1/2 c. sugar
  • 6 oz. blackberries plus additional for garnish
  • 5 tea bags
  • 1/4 cup fresh mint, crushed, plus additional for garnish (can use 2 or 3 mint tea bags if fresh not available.

  2. Pour boiling water over tea bags and crushed mint. Let steep for at least 10 minutes. Strain out mint; stir in sugar. Puree blackberries in food processor; strain out seeds. Stir blackberry puree into tea. Taste and adjust sugar level, if necessary. Chill until serving. Garnish each glass with mint leaf and two to three whole blackberries.
