Ingredientes

  • 2 c. whole-wheat pastry flour
  • 2 tsp baking pwdr
  • 1/2 tsp baking soda
  • 2 tsp cinnamon
  • 3 Tbsp. sugar
  • 1/2 c. unsweetened applesauce
  • 2 x Large eggs beaten
  • 1/2 c. low-fat buttermilk
  • 2 c. fresh blackberries

Direcciones

  1. Preheat the oven to 350 degrees.
  2. In a medium bowl, combine the flour, baking pwdr, baking soda, cinnamon, and sugar.
  3. In a separate bowl, combine the applesauce, Large eggs, and buttermilk. Add in the dry ingredients slowly to the wet ingredients. Mix gently till just combined. Carefully mix in the blackberries.
  4. Pour the batter into nonstick muffin c. till they are two-thirds full. Bake for 20 to 25 min till a toothpick comes out clean and muffins are lightly browned.
  5. This recipe yields 12 servings.
  6. Serving size: 1 muffin.
