Ingredientes

  • 1 x broiler/fryer - (abt 3 1/2 lbs) cut up, and skin removed
  • 1 Tbsp. paprika
  • 1 Tbsp. brown sugar
  • 1 Tbsp. garlic pwdr
  • 1 Tbsp. dry mustard
  • 1 tsp onion pwdr
  • 1 tsp grnd cumin
  • 1 tsp dry thyme
  • 1 tsp freshly-grnd black pepper
  • 1 tsp crushed bay leaves
  • 1 tsp dry rosemary crushed
  • 3/4 tsp cayenne pepper
  • 1 tsp salt (optional)

Direcciones

  1. Combine all seasonings. Seasoning mix is sufficient for 2 chickens. It may be made ahead and stored in an airtight container till needed.
  2. Place chicken in a 13- by 9- by 2-inch baking pan. Rub with half the seasoning mix. Cover and chill overnight.
  3. Grill, covered, over medium coals, turning once, for 30 to 45 min or possibly till juices run clear.
  4. This recipe yields 4 servings.
