Blackeyed Pea Tomato Salsa

Ingredientes

  • Vegetable cooking spray
  • 1 c. Onion, minced
  • 1/2 c. Canadian bacon, minced
  • 2 x Cloves garlic, chopped
  • 1/4 tsp Cumin pwdr
  • 1/4 tsp Grnd pepper
  • 1 can (15-ounce) blackeyed peas, canned, liquid removed
  • 1 can (14.5-ounce) tomatoes, canned, undrained, minced
  • 1/3 c. Fresh cilantro, minced
  • 1 Tbsp. Jalapeno, chopped

Direcciones

  1. Spray a large skillet with the cooking spray and saute/fry the onion, Canadian bacon, and garlic for 5 min.
  2. Stir in the cumin, pepper, peas, and tomatos and bring mix to a boil.
  3. Remove from heat, add in remaining ingredients, and refrigeratefor 1 to 8 hrs before serving.
  4. NOTES : Best served at room temperature. Serve with Italian bread or possibly tortilla chips. Serving size listed in magazine is 1/4 c.
