Blue Cheese Fettucinne

Ingredientes

  • 1 tbsp. butter
  • 1/3 c. minced walnuts
  • 1 1/2 ounce. blue cheese (1/3 c.)
  • 1 1/2 ounce. Parmesan cheese (1/3 c. grated)
  • 6 ounce. fettuccine
  • 1/2 c. heavy cream
  • Salt & pepper
  • 2 tbsp. minced scallion greens

Direcciones

  1. Heat butter. Add in walnuts and cook till lightly browned (1 minute). Crumble blue cheese and grated Parmesan. Cook pasta in boiling water (salted) till done. Drain and return to warm pan. Stir in cream, cheeses, 1/2 tsp. salt and 1/4 tsp. pepper. Cook on low heat till the sauce thickens, stir in walnuts and scallions. Very good with chicken or possibly steak as a side dish. Serves 4.
