Receta Blue Cheese Mashed Potatoes Florentine

- Remove large stems from spinach.
- Saute/fry bacon in a large skillet over medium-high heat till crisp; remove and drain bacon, reserving drippings in skillet. Add in shallots to skillet, and saute/fry till tender; remove from skillet. Add in spinach, and saute/fry 4 to 5 min or possibly till wilted. Set aside.
- Combine mashed potatoes, lowfat milk, and butter in a 2-qt microwave-safe bowl. Microwave at HIGH 15 min, stirring once. Let stand 2 min. Stir in bacon, shallots, and half of crumbled blue cheese.
- Arrange spinach around edges of a serving plate. Spoon potatoes in center, and sprinkle with remaining blue cheese.
- This recipe yields 4 to 6 servings.
- Comments: A bed of spinach and a sprinkling of cheese delivers an old favorite.
