Blue Cheese Stuffed (Crockpot!) Buffalo Chicken Meatballs

While I have absolutely no idea who is playing in the Super Bowl on Sunday, I have been thinking about what game day snacks I want to make, and these Blue Cheese Stuffed Meatballs are at the to of my list.

Not only are they delicious but once you get them into the crockpot, you don’t have to do a thing. After they’re done cooking you can simply turn the crockpot to ‘warm’ and leave them in there until it’s time to eat. Because really, whats worse then being stuck in the kitchen the whole time and missing the game half-time show?

I opted for the lean ground chicken in this recipe but if you want a little more flavor and fat, be sure to buy the darker ground chicken (if you double the recipe, you can cut the difference, and go half and half).

Blue Cheese Stuffed (Crockpot!) Buffalo Chicken Meatballs

Yield: 24 meatballs

Prep Time: 20 minutes

Cook Time: 10 minutes in the oven + 2 Hours in crockpot

Total Time: 2 hours + 10 minutes

Ingredients:

Directions:

Pre-heat oven to 350.

Line a rimmed baking sheet with a split mat and set aside.

In a large bowl, combine; ground chicken, egg, bread crumbs, onion, onion powder, garlic, parsley, 1 tbsp. of hot sauce, salt and pepper. Use your hands to gently mix together just until everything is incorporated.

Grab a hearty tablespoon of the mixture and roll in between the palms of your hand to form a ball. Stuff a small cube of blue cheese inside the meatball and roll a little more to seal.

Place on baking sheet and continue until you have rolled all the balls.

Bake in oven for ten minutes and then transfer to a crockpot. Cover with the remaining wing sauce and cook on low for 2 hours.

Serve and enjoy!

*Note: the mixture is sticky and will stick to your hands. The best way to avoid this is to wet your hands with cold water before forming the meatballs. All problems solved!
