,%20white%20(fish)%20and%20blue%20(corn%20chips).%3C/p%3E%3Cp%3EThe%20small%20towns%20in%20Colorado%20don't%20typically%20have%20the%20best%20fish%20but%20you%20can't%20really%20go%20wrong%20with%20Tilapia%20since%20it%20comes%20in%20frozen%20anyway.%20So,%20I%20purchased%20some%20Tilipia%20for%20myself%20while%20I%20got%204%20boneless,%20skinless%20chicken%20breasts%20for%20the%20rest%20of%20my%20crew.%3C/p%3E%3Cp%3ETo%20encrust%20the%20chicken%20and%20fish%20this%20was%20all%20that%20was%20needed:%3C/p%3E%3Cp%3E1%20bag%20of%20Blue%20Corn%20Chips%3C/p%3E%3Cp%3Eegg%20whites%20or%20an%20egg%20(I%20used%20egg%20whites%20since%20we%20had%20those%20in%20the%20house)%3C/p%3E%3Cp%3ECrumble%20or%20puree%20in%20the%20food%20processor%20the%20Blue%20Corn%20Chips.%20I%20divided%20the%20crumbled%20chips%20into%202%20zip%20lock%20bags,%20one%20for%20the%20fish%20and%20one%20for%20the%20chicken%20pieces.%3C/p%3E%3Cp%3EI%20then%20took%20some%20egg%20whites%20and%20brushed%20it%20over%20the%20chicken%20and%20fish.%20After%20coating%20with%20egg%20whites%20I%20took%20the%20chicken%20pieces%20one%20at%20a%20time%20and%20placed%20them%20in%20one%20of%20the%20zip%20lock%20bags,%20sealed%20and%20shook%20each%20piece%20until%20coated.%3C/p%3E%3Cp%3EI%20placed%20each%20encrusted%20piece%20of%20chicken%20on%20a%20foil%20lined%20jelly%20roll%20pan%20coated%20with%20non-stick%20spray.%20Then%20sprayed%20the%20top%20of%20each%20piece%20of%20encrusted%20chicken%20with%20the%20non-stick%20spray.%20This%20helps%20for%20moisture%20and%20to%20brown%20the%20coating.%3C/p%3E%3Cp%3EI%20did%20the%20same%20for%20each%20encrusted%20piece%20of%20Tilapia%20only%20placing%20them%20directly%20on%20the%20sprayed%20heavy%20duty%20foil%20sealing%20the%20top%20and%20sides.%3C/p%3E%3Cp%3ESince%20I%20only%20had%20one%20oven%20to%20work%20with%20that%20was%20already%20in%20use%20I%20decided%20to%20put%20these%20all%20on%20the%20grill%20outside%20to%20cook.%20I%20placed%20the%20chicken%20on%20for%20about%2015%20minutes%20and%20the%20fish%20on%20for%20at%20most%206-8%20minutes.%20All%20turning%20out%20perfectly%20cooked%20and%20moist.%3C/p%3E%3Cp%3EPrior%20to%20preparing%20the%20encrusted%20fish%20and%20chicken%20I%20made%20the%20Raspberry%20Chipotle%20sauce.%20This%20made%20about%202%20cups%20and%20was%20so%20tasty.%20It%20had%20a%20bit%20of%20a%20kick%20to%20it%20but%20if%20spice%20isn't%20a%20problem%20then%20go%20with%20the%20recipe%20I%20have%20posted%20below.%20Otherwise%20you%20may%20want%20to%20use%20a%20little%20less%20of%20the%20Chipotle%20Peppers%20in%20Adobo%20Sauce.%3C/p%3E%3Cp%3EThis%20sauce%20would%20also%20taste%20great%20over%20Salmon,%20as%20a%20dip%20for%20chips%20or%20veggies%20or%20whatever%20else%20you%20can%20think%20of.%20It%20was%20so%20delicious%20and%20beats%20purchasing%20the%20ready-made%20jarred%20versions%20with%20as%20simple%20as%20it%20was%20to%20prepare.%3C/p%3E%3Cp%3EHeat%20all%20ingredients%20in%20a%20saucepan%20for%20approximately%2015%20minutes.%20Cool%20for%20a%20few%20minutes%20and%20place%20in%20a%20food%20processor%20or%20blender%20to%20puree%20or%20rough%20chop%20(whichever%20consistency%20you%20prefer)%3C/p%3E%3Cp%3EServe%20warm%20or%20chilled.%3C/p%3E%3Cp%3EEnjoy!%3C/p%3E%3Cp%3EHappy%204th%20of%20July!%3C/p%3E){kind=link}
