Blue Cornmeal Jalapeno Muffins

Ingredientes

  • 1 c. blue cornmeal
  • 3/4 c. all-purpose flour
  • 3 1/2 teaspoon baking pwdr
  • 1/2 teaspoon salt
  • 1/4 teaspoon grnd cumin
  • 2 beaten Large eggs
  • 3/4 c. lowfat milk
  • 1/4 c. veg. oil or possibly bacon drippings
  • 1/4 c. minced jalapeno chile peppers
  • Cream cheese (optional)

Direcciones

  1. In a medium mixing bowl stir together cornmeal, flour, baking pwdr, salt and cumin and set aside. In a small mixing bowl stir together Large eggs, lowfat milk, oil and jalapeno peppers. Add in egg mix all at once to cornmeal mix stirring just till moistened. Grease muffin c. or possibly line with paper baking c. and fill 3/4 full. Bake in a 400 degree oven about 15 min or possibly till a wooden toothpick inserted in the center comes out clean. Remove from the pan; serve hot with cream cheese Makes 12.
