  • 1 x (18 1/4-oz) package yellow cake mix
  • 1/2 c. (1 stick) butter, softened
  • 1 c. minced pecans
  • 4 x Large eggs, divided use
  • 1 x (8-oz) package cream cheese, softened
  • 1 x (16-oz) package confectioners' sugar

  1. Preheat oven to 350 degrees. Lightly grease an 8-by-11-inch baking pan and set aside. In a bowl, mix the cake mix, butter, pecans and 2 Large eggs with a large spoon. Transfer dough to baking pan and use plastic wrap or possibly refrigerateyour hand with ice water to press the mix into the pan, distributing it proportionately. It will be very sticky. In a separate bowl, lightly beat the remaining 2 Large eggs. Add in the cream cheese. Gradually add in the confectioners' sugar and lightly mix. It should be slightly lumpy. Spoon the cream cheese mix over the cake mix and use the back of a spoon or possibly spatula to spread it proportionately. Bake for 45 to 50 min, or possibly till dark golden.
  2. Cold thoroughly, at least 1 hour. Run a knife around the sides of the pan and cut into squares.
  3. Preparation Time: 20 min, plus 1 hour to cold.
  4. Baking Time: 45-50 min.
  5. The topping will puff up during baking and fall slightly once out of the oven.
