Blueberries and Spring Greens with Homemade Blueberry Salad Dressing

Welcome to the first monthly Salad Recipe series launched by my friend Wendy from the Weekend Gourmet

#TheSaladBar is the name of the series. Many bloggers will be participating in this monthly series. Each month will have a theme.

This month the theme is Berries.

I tasted an excellent blueberry salad dressing that came in one of the prepackaged lettuce mixes from Trader Joe’s a while back and this challenge got me thinking that I could make my own Blueberry Salad Dressing and share it with all of you.

Spring Greens with Homemade Blueberry Salad Dressing

TO MAKE THE DRESSING

In a blender, put all the ingredients for the blueberry dressing and blend well. Set aside. Store at Room temperature until ready to use. You can refrigerate the rest but bring back to room temperature before you use it again.

TO MADE THE SALAD

in a large bowl, combine the lettuce, radishes and carrots. Add 4 Tablespoons of dressing and combine until well mixed.

Our onto your plates, add blueberries to each plate and top with the avocado slices. Add one additional Tablespoon dressing to each plate, if desired.

Spring greens or even baby spinach leafs goes so well with the blueberries and this dressing.

Just use your imagination and pick the veggies that you love best.

I just love the fact that blueberries are tasty, but think of all the health benefits you get from berries too.
