Ingredientes

  • 1 c. all-purpose flour
  • 1/2 c. flax meal (grnd flaxseeds)
  • 1 Tbsp. sugar
  • 1 tsp baking pwdr
  • 1/2 tsp baking soda
  • 1/2 tsp grnd cinnamon
  • 1 x beaten egg
  • 1 c. buttermilk
  • 2 tsp oil
  • 1 c. fresh blueberries

Direcciones

  1. In a medium mixing bowl combine flour, flax meal, sugar, baking pwdr, baking soda, and cinnamon. Make a well in center of dry mix; set aside.
  2. In another medium mixing bowl stir together the egg, buttermilk and oil. Add in liquid ingredients all at once to dry mix. Stir just till moistened (batter will be lumpy). Gently mix in blueberries.
  3. For each pancake, pour about 1/4 c. of the batter onto a warm, lightly greased skillet. Cook over medium heat about 2 min on each side, or possibly till pancakes are golden. Serve 2 pancakes per person topped with fresh berries, syrup or possibly powdered sugar.
  4. This recipe yields 4 servings.
  5. Comments: Frzn blueberries can be used instead of fresh; defrost first and drain excess liquid.
