Blueberry Banana Sourdough Scones
- Blueberry Banana Sourdough Scones with Lemon Glaze
- A Delicious Scone made with a Sourdough Starter
- 2 1/2 c. flour
- 1/2 c. rolled oats
- 3 t. baking powder
- 1/4 t. salt
- 1/3 c. butter, cold and cubed
- 1 c. fresh blueberries, rinsed and patted dry
- 1 cup, about 2, mashed bananas
- 1/3 c. brown sugar, packed
- 3/4 c. sourdough starter
- 1/2 t. lemon extract
- 1 egg
- sliced almonds for top of scones
Directions:
1. Preheat oven to 375 degrees
2. Combine flour, oats, baking powder, and salt.
3. Cut in butter until resembles coarse crumbs.
4. Stir in blueberries, toss to coat.
5. In a medium bowl stir together, bananas, brown sugar, sourdough, egg and lemon extract.
6. Stir banana mixture into dry ingredients, until moistened.
7. Turn dough onto well floured surface, knead 5-10 times. This dough will be very sticky
8. Pat into a 12 inch circle. Cut into 10-12 scones.
9. Transfer scones to a baking sheet lined with parchment paper.
10. Place a few sliced almonds on top of each scone and press down lightly.
11. Bake at 375 degrees for 15-18 mins or until golden brown.
12. Remove scones from oven and transfer to wire racks. Cool slightly.
13. Drizzle with Lemon Icing, Recipe Follows
Lemon Glaze
1 c. powdered sugar
2-3 T milk
1/2 t. lemon extract
1/4 t. lemon zest
yellow food coloring, if desired
Combine powered sugar and milk, stir in lemon extract and lemon zest, add food coloring if using. Stir until of drizzling consistency. Place icing in a small ziplock baggie. Snip a tiny hole in one corner of bag. Drizzle icing over scones, spread icing with the back of a small spoon.
