Ingredientes

  • 3 trays chopped old bread (small pieces)
  • 1 1/4 cup melted margarine
  • 1 Tbsp cinnamon
  • 1 1/2 qt egg beaters
  • 1 cup eggs
  • 2 1/2 cups brown sugar-packed
  • 1/4 cup vanilla extract
  • 2 tsp salt
  • 1 1/4 gal skim or 2% milk
  • 1 pinch nutmeg
  • 4 pints blueberries- frozen, well drained
  • 1/2 cup sugar

Direcciones

  1. Spray hotel pans with vegetable spray.
  2. Combine melted margarine, eggs, brown sugar, cinnamon, vanilla, salt, milk, and nutmeg. Whisk well to combine and incorporate brown sugar.
  3. Fill pans with bread crumbs.
  4. Pour liquid mixture evenly over the pans to distribute equally.
  5. Add blueberries, making sure they are distributed equally.
  6. Mix together well.
  7. Allow liquid to completely infuse bread for a minimum of 1 hour.
  8. Sprinkle sugar lightly and evenly among pans- do not mix in.
  9. Bake in 300 degree convection oven (or 325 conventional oven) for 45-60 minutes.
  10. Test doneness by inserting toothpick into the center of the bread pudding, making sure pick is clean when it comes out.
  11. Note: Please make sure there are not too many crusts in mix, especially if using burger and dog buns, and that the top is not dry and hard.
