Ingredientes

  • 2 c. flour
  • 1 c. cornmeal
  • 1/4 c. sugar
  • 2 tsp baking pwdr
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/4 tsp grnd cinnamon
  • 2 x Large eggs
  • 3 c. buttermilk
  • 1/3 c. butter melted
  • 2 c. fresh blueberries (or possibly unthawed frzn berries) Orange Butter (see recipe)

Direcciones

  1. In a large bowl combine flour, cornmeal, sugar, baking pwdr, baking soda, salt, and cinnamon.
  2. In a medium bowl, beat Large eggs; add in buttermilk and 1/3 c. melted butter. Add in the egg mix to the flour mix and stir just till moistened; mix in blueberries.
  3. Spoon 1/4 c. of the batter onto a greased griddle. Cook till both sides are light brown on the inside and crisp on the outer edges. Repeat with remaining butter. Serve with Orange Butter.
  4. This recipe yields 6 servings.
