,%20they%20are%20not%20grown%20in%20abundance%20locally%20(broccoli)%20or%20they%20are%20so%20necessary%20either%20in%20the%20winter%20(onions,%20peppers,%20garlic)%20or%20for%20specific%20preparations%20(galangal,%20lemongrass).%20But%20certain%20fruits%20and%20veggies,%20we%20only%20eat%20seasonally.%20My%20kids%20spend%20all%20year%20eagerly%20anticipating%20watermelons,%20berries%20and%20tomatoes.%20Peaches.%20Corn.%3C/p%3E%3Cp%3ESome%20of%20these,%20like%20watermelon%20and%20stone%20fruits,%20we%20literally%20do%20not%20eat%20off%20season.%20Some,%20like%20corn,%20we%20buy%20frozen%20from%20the%20grocery%20store%20(domestic%20and%20organic%20for%20corn).%20But%20some,%20namely%20blueberries%20and%20tomatoes,%20we%20spend%20the%20summer%20frantically%20freezing,%20so%20we%20can%20enjoy%20them%20year%20round.%20%20Not%20out%20of%20hand,%20of%20course%E2%80%93only%20freshly%20picked%20is%20good%20for%20that.%20But%20frozen%20tomatoes%20are%20fantastic%20in%20sauces%20and%20curries,%20and%20frozen%20blueberries%20are%20delicious%20in%20crisps,%20pies,%20cobblers,%20on%20top%20of%20yogurt%20and%20in%20quick%20breads%20and%20pancakes.%3C/p%3E%3Cp%3EThe%20key%20to%20freezing%20tomatoes%20and%20blueberries%20is%20clean,%20dry%20and%20loose.%20It%20goes%20without%20saying%20to%20do%20this%20with%20freshly%20picked%20produce%E2%80%93and%20if%20blueberries%20do%20not%20grow%20where%20you%20live%20(as%20is%20the%20case%20with%20me),%20for%20goodness%E2%80%99%20sake,%20order%20some%20from%20a%20farm%20in%20Michigan!%20%20First%20clean%20them.%20Then%20let%20them%20air%20dry%20completely%20on%20towels.%20Then%20place%20them%20on%20a%20cookie%20sheet%20with%20rims%20and%20place%20them%20in%20the%20freezer.%20Do%20not%20pack%20them%20until%20they%20are%20solidly%20frozen.%20Vacuum%20packing%20is%20best,%20but%20a%20freezer%20ziplock%20bag%20works%20also.%3C/p%3E%3Cp%3EDuring%20blueberry%20season,%20we%20freeze,%20bake%20and%20eat%20at%20least%2030%20pounds.%20We%20adore%20them.%20John%20brought%20home%2023%20pounds%20to%20freeze%20and%20had%20to%20go%20back%20for%20several%20more%20pounds%20that%20day%20because%20so%20many%20were%20eaten%20before%20I%20could%20get%20them%20frozen.%20In%20addition%20to%20eating%20fresh,%20we%20also%20make%20a%20lot%20of%20blueberry%20desserts,%20I%20made%20this%20parfait%20(can%20I%20call%20it%20a%20parfait%20if%20it%20had%20no%20ice%20cream?)%20based%20on%20a%20crisp,%20but%20instead%20of%20baking%20the%20crisp%20and%20serving%20with%20ice%20cream,%20I%20made%20the%20crisp%20topping%20and%20blueberries%20separately,%20and%20then%20layered%20them%20with%20vanilla%20whipped%20cream.%20It%20was%20a%20huge%20hit%20with%20John%20and%20myself.%20True%20to%20their%20ages,%20one%20girl%20wanted%20it%20without%20the%20blueberries%20and%20one%20wanted%20it%20without%20the%20crisp%20topping.%20Of%20course%20both%20wanted%20the%20whipped%20cream.%3C/p%3E%3Cp%3EBlueberry%20Crisp%20Parfait%3C/p%3E%3Cp%3ERecipe%20by%20The%20Spiced%20Life%3C/p%3E%3Cp%3EBegin%20with%20the%20blueberries.%20Dump%20everything%20except%20the%20corn%20starch%20mixture%20into%20a%20heavy%20pot%20over%20medium%20heat.Bring%20to%20a%20simmer%20and%20let%20simmer%20for%205%20minutes.%20Add%20the%20corn%20starch%20mixture%20and%20let%20continue%20to%20simmer%20for%2015%20minutes.%20Set%20aside%20to%20cool.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20375%20F.%20Line%20a%20cookie%20sheet%20with%20parchment%20paper.%20Mix%20all%20of%20the%20dry%20ingredients%20for%20the%20crisp,%20including%20the%20brown%20sugar.%20%20Rub%20the%20butter%20into%20the%20dry%20mixture.%20Sprinkle%20the%20mixture%20over%20the%20prepared%20cookie%20sheet.%20Bake%20for%20approximately%2020%20minutes,%20until%20it%20is%20golden%20brown%20and%20crisp.%20Remove%20from%20the%20oven%20and%20let%20cool%20completely.%3C/p%3E%3Cp%3EWhen%20the%20blueberries%20and%20crisp%20have%20both%20cooled%20to%20room%20temperature,%20make%20the%20whipped%20cream.%20Add%20the%20vanilla%20when%20you%20add%20the%20sugar,%20when%20the%20cream%20has%20thickened%20but%20is%20not%20yet%20fluffy.%3C/p%3E%3Cp%3ELayer%20the%20components%20into%20the%20glasses:%20begin%20with%20a%20layer%20of%20blueberries,%20followed%20by%20crisp%20and%20then%20whipped%20cream.%20Then%20another%20layer%20of%20blueberries,%20followed%20by%20whipped%20cream%20and%20ending%20with%20crisp%20on%20top%20(yes%20the%20crisp%20goes%20in%20at%202%20different%20points).%20Eat%20right%20away!%3C/p%3E){kind=link}
